In the last five years, we have seen an exponential rise in the cannabis industry. More and more facets of our society are being "infused" with the cannabis culture and cooking is one of them. Forget the days of various space cakes, muffins and cookies. Today, everything can be and is infused with cannabis. However, the common method of cooking cannabis-infused butter or oil and then using them instead the regular varieties is still used to make cannabis edibles.

What you need to do is take an amount of butter or oil, add cannabis to it and then cook it over a weak fire for a couple of hours. The reason why a weak fire is used (110 degrees C or less) is the process of decarboxylation. Decarboxylation is a chemical reaction where a carboxylic acid is removed from the inactive chemical compound THCA, transforming it into THC. This reaction occurs at a certain temperature and makes your butter more potent, while higher temperatures burn off THC and therefore make it less potent. Also, the amount and kind of cannabis you use directly correlates to the concentration of THC in the medium, so don't overdo it. After this mix has been simmering for a minimum of 2 hours (the longer it simmers the better it'll be) you will need to strain it through a fine-mesh strainer and voila! You have prepared your own cannabutter that can be used in most meals to give them that special kick.

For an example, we prepared a tomato sauce recipe with cannabis for you to try out. This is your standard homemade tomato sauce that can be used as a main dish with pasta or you can add it to any meal that requires tomato sauce. The only difference is that this tomato sauce has a special ingredient that will make cooking a thing to look forward to and your guests coming back for more. Try it out and enjoy:

INGREDIENTS

  • 1 can of tomato paste (6oz)
  • 2 tablespoons of cannaoil
  • ½ cup of onions, chopped
  • ½ cup of cannabutter
  • ½ cup of water
  • 1 garlic clove, minced
  • 1 bay leaf
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon thyme

STEPS

  1. Mix all of the ingredients in a large pot.
  2. Cover the pot and simmer the ingredients on a medium-low heat for 2 hours.
  3. Serve over spaghetti.
