Cannabis gingerbread is a great way to combine childhood Christmas memories with an adult love for cannabis. This mixture is versatile—with it, you can make a gingerbread man, a gingerbread house, cannabis leaf-shaped cookies, or just classic round cookies. The choice is yours! Cookies in fun shapes make for great party favours, or just a treat for a quiet winter’s day with a book. Whatever you choose to do with these cookies, we have no doubt they’ll give your December a little extra something!

INGREDIENTS

  • ½ cup cannabis - infused butter or coconut oil (for vegan)
  • 1 large egg
  • 2⅔ cups all-purpose flour
  • ½ cup molasses
  • ⅓ cup dark brown sugar
  • ½ tsp. salt
  • ¾ tsp. baking soda
  • 1 tbsp. ground ginger
  • 1 tbsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. clove
  • ¼ tsp. allspice
  • 2 tbsp. water
  • Frosting (optional)

HARDWARE

  • 2 cookie sheets
  • Wax paper
  • 2 large mixing bowls
  • Whisk
  • Large wooden spoon for stirring
  • Rolling pin (optional)
  • Cookie cutters (optional)
  • Plastic Ziploc bag (optional)

INSTRUCTIONS

  1. Pre-heat oven to 200°C.
  2. Combine cannabutter/cannabis coconut oil and dark brown sugar in large mixing bowl. Whisk until fluffy. Mix in molasses, egg, and water. Stir until well-combined.
  3. In a second bowl, mix flour, salt, ginger, cinnamon, nutmeg, clove, allspice, and baking soda. Stir until homogenous.
  4. Slowly stir dry mix into wet mix. Mix until well-combined.
  5. Lay out wax paper on cookie sheets.
  6. If you want simple round cookies, roll your dough into balls, place them on the cookie sheet, and bake for 8 minutes.
  7. If you want your cookies in fun shapes, divide your dough in half and place both halves in the fridge for 30 minutes.
  8. Remove dough from fridge. Sprinkle flour on kitchen counter, and use rolling pin to roll out dough over flour. Flattened dough should be ⅛ inch thick.
  9. Use cookie cutters to cut dough into fun shapes. Place cookies on wax baking sheet. Combine scraps of dough into new dough balls and re-roll to make space for more cookies.
  10. Once all dough is used up, bake cookies for 8 minutes. Remove from oven and let cool.
  11. Now it’s time for frosting! Cut a corner off the Ziploc bag and place frosting inside. Squeeze to release a line of frosting, and decorate your cookies as you wish!
